What's more fun than a cupcake? Well, not much, except for a cupcake in every color of the rainbow. Just what we needed to brighten up a few cloudy days last week.
After mixing white cupcake batter as directed on the box (yes, I said box). Or use your own white batter recipe. Divide the batter evenly into 6 bowls. Color each bowl a different color following these guides of food coloring drops:
Purple: 9 red and 6 blue drops
Blue: 12 drops
Green: 12 drops
Yellow: 12 drops
Orange: 12 yellow and 4 red
Red: 18 drops
Then add a layer of each color to cupcake wrappers. The first few I was rather careful to line the colors in even layers in rainbow order (ROY G BIV). Then I decided to get creative (read: speed things up a bit) and added the colors in not so careful even layers and they turned out just as fun- more of a tie-dye look.
Then for the frosting, I was just going to put a "cloud" of white on top but decide to do something different. Before putting the frosting into a pastry bag, I put a little bit of gel food coloring down by the tip of the bag (used a little paintbrush to get the whole area covered and to blend a bit and create purple and orange). Then I added the white frosting and started to top the cupcakes. REALLY easy! If you have a tough time holding the bag to add the colors: put it in a glass to help you hold it up straight, fold down the sides over the edge of the glass (allowing easier access to the inside of the bag) and then add the colors and frosting.
They tasted sooooo good!
